A flapjack is a sweet dense cake made of oats, maple syrup and butter served in rectangles. HIVE Granola Chocolate Vegan recipe is a healthier alternative, it is easy to prepare and full of delicious chocolate and unsaturated fatty acids!
HIVE Vegan Granola Chocolate Flapjack is made up of three layers.
The Base Layer
- 2 cups of granola, such as HIVE Pumpkin Spice Granola
- 100 g coconut oil
- some maple syrup (taste and add accordingly to your desired sweetness)
- a ripe avocado
- 4 tbsp unsweetened cocoa powder
- 4 – 5 tbsp maple syrup
- 3 tbsp almond butter or peanut butter
The Chocolate Top Layer (optional)
The base mixture is ground in a blender to a crumbly cookie dough and placed in a square non stick baking pan. My shape is 20 x 20 cm – but of course it can also be round. If you do not have a non stick pan use baking paper to line your pan.
Freeze base in the freezer for 15 to 20 minutes until it is firm.
While the base is in the freezer prepare the middle layer. Mix all the ingredients in a blender and spread evenly over the firm base layer and return to the freezer for another 15 to 20 minutes.
As the second layer hardens in the freezer prepare the chocolate sauce. Melt the coconut oil in a water bath and add the unsweetened cocoa powder and the vanilla extract. Allow it to cool, but it should still be smooth enough to spread on top of the middle layer. Return to the freezer for another 15-20 minutes. You can leave it frozen until you need it (I always have one in my freezer).
Once you are ready to serve remove HIVE Granola Chocolate Vegan Flapjack from the freezer to defrost, you should keep it refrigerated if you do not consume it all (coconut fat melts even in mid summer temperatures) and take it out shortly before consumption. You can also cut narrow bars beforehand and wrap them with parchment paper, this way you have HIVE Granola Chocolate Vegan flapjack with you when you are on the go.
Storage and Preservation
Please make sure to use a cooler bag with a cold pack – which you should do anyway in summer. A vegan granola bar where you have controlled all the ingredients yourself is a healthier alternative to ready store bought snacks no matter how ‘healthy’ they are labelled.
You can also use the flapjack base as the basis for a summer fruit salad made from assorted berries!
